Cheesy Baked Eggs with Spinach

Yield: 6 servings

Eggs and spinach again, and why not? The combination can’t be beat for giving you plenty of protein and nutrients. This time they’re baked in individual ramekins so everyone can have their own little casserole. For the early days of your detox, you can leave out the cheese.

Ingredients

4 teaspoons olive oil

12 cups fresh spinach

2 teaspoons minced garlic

1 cup shredded low fat mozzarella cheese

6 eggs

Directions

Preheat oven to 350° F.

Place half the oil in a large skillet. Add 1 teaspoon of garlic and half the spinach and sauté for 2-3 minutes, until spinach is wilted.

Add 1/2 cup of cheese and stir to combine.

Spray 6 ramekins with nonstick cooking spray.

Separate the spinach-cheese mixture into 3 ramekins.

Heat the other 2 teaspoons of oil in your skillet; add garlic and the rest of the spinach and cook as before.

Separate among 3 more ramekins.

Carefully crack one egg into each ramekin on top of the spinach mixture.

Bake for 15 minutes. The yolks should be slightly runny.

Season with salt and pepper.
